Crispiano's grilled liver festival, blending flavor, music, and tradition
The Fegatino Festival is one of the most beloved culinary events of the summer in Crispiano, a town in the province of Taranto, nestled in the heart of the Ionian Puglia. Established in 2023 by the Pro Loco of Crispiano, it has quickly become a staple of the summer calendar, drawing families, curious foodies, and street food enthusiasts from across the Taranto region.
The festival celebrates a humble yet iconic ingredient of Apulian peasant tradition: fegatino (liver), prepared according to local recipes and served in various ways, most notably grilled over charcoal.
The signature dish of the event is liver cooked over an open flame—aromatic and flavorful—served with the essential bombette, local sausages, and homemade bread. The food stalls also offer fresh mozzarella, seasonal vegetables, and other regional specialties, all accompanied by local red wine and ice-cold draft beer. It is honest, popular cuisine that captures the rural soul of the Taranto Murgia.
The Fegatino Festival is about more than just food: every evening is brought to life by DJ sets, street performer acts, folk music shows, and live concerts that keep the crowd singing and dancing until late. Alongside the food stalls, you will find a craft market featuring local products, while entertainment designed for both adults and children makes the festival suitable for the whole family.
The event takes place on the grounds of the F. Severi Technical Institute on Via Bari in Crispiano, which is transformed for the occasion into a grand village of flavors, sounds, and joy. Food stalls generally open at 8:00 PM, and admission is free. The festival is traditionally held on the last weekend of July and is sponsored by the Municipality of Crispiano.
With its genuine and convivial atmosphere, the Fegatino Festival is now considered the most anticipated summer event by the locals. It is the perfect opportunity to discover a traditional dish rarely found outside local borders and to experience an authentic evening in the heart of Puglia's villages, far from the beaten tourist paths.
The 2026 edition of the Fegatino Festival marks the fourth installment of the event organized by the Pro Loco of Crispiano. The dates are set for the last weekend of July, with the F. Severi Technical Institute on Via Bari once again serving as the heart of the festivities. As per tradition, the stars of the menu will be grilled liver, bombette, sausages, and homemade bread, accompanied by cold beer and local Apulian products.
The evenings will be enlivened by folk music, live concerts, DJ sets, and street performer shows, with food stalls opening in the evening with free admission.
The 2026 edition is scheduled for July 24-26, 2026, at the F. Severi Institute in Crispiano. The detailed program, including the names of artists and evening performances, will be announced by the Pro Loco of Crispiano in the weeks leading up to the event.
The festival's usual structure features, every evening starting at 8:00 PM: food stall opening, craft and local product market, street performer acts, live folk music concerts, and DJ sets until late.

By car: from Taranto, you can reach Crispiano in about 20 minutes via the SS7 and SP41 roads. The nearest train station is in Crispiano on the Taranto-Martina Franca line; the reference airport is Bari-Palese, about an hour away.
