The exhibition of Italian artisanal charcuterie in the historic center of Cagli
Distinti Salumi is the national exhibition dedicated to the best Italian artisanal charcuterie, held in the heart of Cagli, a refined town in the province of Pesaro and Urbino, in the Marche Region. The event is promoted by the Municipality of Cagli in collaboration with Slow Food Italia and Slow Food Marche, with the patronage of MASAF, the Marche Region, and the Unione Montana del Catria e Nerone. After a ten-year hiatus, the event was revived in 2025, immediately establishing itself as a benchmark for the world of natural cured meats, extensive farming, and quality productions.
The core of the exhibition is the Market, set up in the squares and streets of the historic center โ Piazza Matteotti, Piazza Papa Niccolรฒ IV, and Via Leopardi โ where over fifty exhibitors from all over Italy showcase and offer tastings of their products. Among the stalls are numerous Slow Food Presidia and rare traditional charcuterie products: from culatello to Bolognese pink cured meats, from goat violin of Valchiavenna to L'Aquila liver sausage, to Vastese ventricina. The market has free admission and is open on Saturdays from 10 am to 8 pm and on Sundays from 10 am to 7 pm.
The program combines culture and tasting. The conferences address topics such as research, native breeds, nutritional quality, and natural production, with the inaugural conference dedicated to "Custodians of Taste" at the Teatro Comunale of Cagli. The Taste Workshops, hosted in historic city spaces like Palazzo Berardi Mochi-Zamperoli, guide the public in discovering the expertise of charcuterie makers, natural cured meats, native products, and products from the Ark of Taste. In the evocative Cortili del Sale (Salt Courtyards), set up in historic palaces, cured meat tastings are paired with over sixty labels from Marche wineries.
Completing the experience is the Slow Food Alliance Inn (Osteria dell'Alleanza), where chefs offer traditional Marche recipes for lunch and dinner, along with a series of off-site events featuring preview dinners at local inns. Distinti Salumi is not just a celebration of taste, but a project of community, training, and networking aimed at creating a "distributed school of charcuterie," preserving skills and biodiversity for future generations.
Visiting Distinti Salumi is also an opportunity to discover Cagli, a city of ancient origins along the old Via Flaminia, at the foot of Monte Catria and Monte Nerone. Its historic center houses the Teatro Comunale, Renaissance palaces, and the famous Torrione del Sangallo, all set within a landscape of hills and villages that provide the ideal backdrop for an event dedicated to tradition and territory.
The 2026 edition of Distinti Salumi was held in Cagli (PU) from Friday, May 22 to Sunday, May 24, 2026, bringing together producers, breeders, charcuterie makers, chefs, and experts from all over Italy. The Market, with over fifty exhibitors, animated Piazza Matteotti, Piazza Papa Niccolรฒ IV, and Via Leopardi, hosting numerous Slow Food Presidia. The inaugural conference "Custodians of Taste" took place on Saturday, May 23, at the Teatro Comunale, while the Taste Workshops were held at Palazzo Berardi Mochi-Zamperoli.
The Cortili del Sale offered tastings paired with labels from Marche wineries, the Osteria dell'Alleanza served traditional dishes, and preview dinners on Friday opened the event. Mayor Alberto Alessandri emphasized how the event combines "culture, economy, tourism, and territorial identity," while Slow Food reiterated the goal of transforming the exhibition into an ongoing project for training and networking.
By car: Cagli is reachable from the SS3 Flaminia, about 40 minutes from Fano and the A14 motorway exit. By train: the reference station is Fano, then connected to Cagli by bus. Nearest airports: Ancona-Falconara and Rimini.
