A celebration of rural culture in the streets of Baucina, in the Palermo Mountains
The Wheat Festival – Baucina Food Fest is the late-summer highlight for the small village of Baucina, in the province of Palermo. Perched at an altitude of approximately 550 meters among the mountains overlooking the valley, this town of just over two thousand residents comes alive during the event. Established in 2017 and organized with passion by Pro Loco Baucina APS, the festival transforms the historic center and the Fruscillo district into a vast open-air theater dedicated to wheat and Sicilian peasant civilization.
The most anticipated and iconic moment is the re-enactment of the Pisata and Spagghiata, the ancient practices used by farmers before mechanization to separate wheat from straw. Mules walk in circles on the threshing floor, trampling the stalks, while the 'spagghiata' uses the wind to winnow the grains—a labor ritual accompanied by prayers to patron saints for a bountiful harvest. Surrounding this re-enactment is the Via d'un tempo (Street of Yesteryear), a walk through ancient trades—blacksmiths, basket weavers, embroiderers—that recreates the atmosphere of the 1950s.
The Baucina Food Fest is the gastronomic side of the event: along the village streets, excellent street food is served, featuring strictly local products, from spleen sandwiches to cuddiruni, from sausage to stigghiola, and traditional baked goods and desserts. Local butchers, bakeries, and producers bring the stalls to life, alongside Mani in pasta (Hands in Dough) workshops dedicated to bread-making and handmade pasta.
In the evening, the festival lights up with music and performances: past editions have featured live concerts, Argentine tango milongas, video mapping on historic facades, and DJ sets that keep the party going until late at night. It is a free, deeply popular event that draws visitors from Palermo and across Sicily every year.
The Baucina Wheat Festival is traditionally held on the last Sunday of August. Through this festival, the Sicily region preserves one of its most authentic agricultural rites: those who visit Baucina during these days discover not only the island's flavors but the living memory of field labor.
The Wheat Festival – Baucina Food Fest 2026 will be held on Sunday, August 30, 2026, the last Sunday of the month according to tradition. The event, organized by Pro Loco Baucina APS, will animate the historic center and the Fruscillo district as usual with the re-enactment of the Pisata and Spagghiata, street food with local products, bread-making workshops, and live music in the evening.
At the moment, the Pro Loco has confirmed the date but has not yet published the full program for the 2026 edition, including times and guest artists. Details of the schedule will be communicated on the official Pro Loco Baucina channels in the weeks preceding the event.
Baucina is located in the province of Palermo, about 40 km from the regional capital. By car, it can be reached via the SS121 (Palermo–Agrigento) taking the exit towards Ventimiglia di Sicilia–Baucina. The nearest airport is Palermo Falcone-Borsellino (Punta Raisi).
Admission to the festival is free. Street food tastings and products from vendors are paid for directly at the individual stalls.
The event takes place along the uphill streets of the historic center: comfortable clothing is recommended. Activities run from the afternoon until late at night, with the Pisata re-enactment in the late afternoon and concerts in the evening.
