The most delicious table in Val di Scalve
The Shoulder Festival is the gastronomic celebration that honors one of the symbolic dishes of Val di Scalve in Schilpario, in the province of Bergamo: the cooked shoulder. Prepared according to tradition and served in abundance, the shoulder is the heart of an evening that attracts residents and visitors every year, drawn by the authentic flavors of the Bergamo mountains.
The most characteristic aspect of the festival is the large communal table set up along the main street of the village, where hundreds of diners sit together to enjoy the traditional menu. It is a convivial ritual that makes the festival a moment of community, where the entire village comes together around good food.
The menu features, in addition to the cooked shoulder, polenta, potatoes, local cheeses, and dessert, in a journey of flavors that tells the story of mountain cuisine in Val di Scalve. The evening is accompanied by live music, which transforms the dinner into a true village celebration, filled with toasts and merriment.
The festival is organized by the tourist association Atiesse of Schilpario, which takes care of setting up the tables and welcoming the numerous participants. Given the large turnout, reservations are mandatory and places are limited. For Schilpario and for Val di Scalve, the Sagra della Spalla is one of the most delicious and beloved events of the summer, a symbol of hospitality and gastronomic tradition in the upper Bergamo province.
The 9th edition of the Sagra della Spalla will be held in Schilpario on Saturday, June 27, 2026. The evening, organized by the tourist association Atiesse, includes an aperitif in the square with the youth group starting at 5 PM, dinner along Via Padre Maj on a single long table from 7 PM to 9 PM, and live music from 9 PM. The star dish is the cooked shoulder, a symbol of Val di Scalve.
