The rustic focaccia of Grecìa Salentina celebrated in Zollino
The Sceblasti Festival is one of the most iconic gastronomic events in inland Salento. Every summer, it transforms the small village of Zollino, in the heart of Grecìa Salentina in the province of Lecce (Puglia), into a giant open-air bakery dedicated to scèblasti, the rustic focaccia that gives the event its name. The term comes from Griko, the ancient Greek-rooted language still spoken in the local towns, and literally means "without shape": scèblasti is an irregular, generous, and homemade dough, far removed from the geometry of standard bread.
Scèblasti originated as a humble bread in Zollino's cuisine: a durum wheat flour dough enriched with black olives, onions, zucchini, tomatoes, capers, chili, extra virgin olive oil, and salt, slow-baked in traditional wood-fired ovens. It was once the first loaf to be pulled from the oven, shared by families while still hot. The festival recovers and showcases this peasant memory, bringing back to the town square the gestures, scents, and flavors that were once confined to home kitchens.
Organized by the Pro Loco of Zollino since 1996, the Sceblasti Festival takes place between Piazza Sant'Antonio and the streets of the historic center. Along the route, food and wine stalls offer freshly baked scèblasti alongside other traditional Salento specialties, accompanied by local wines. The event also features a craft market, workshops, and moments dedicated to Griko culture.
In the evening, the festival ignites with live music: concerts, pizzica groups, and Salento folk music fill the squares until late at night. Those interested can join pizzica dance classes, the traditional dance of Salento, in a collective festive atmosphere that unites residents and visitors alike.
The Sceblasti Festival is an opportunity to discover an authentic corner of Salento, far from the crowded coastal destinations, and to immerse yourself in the folk traditions of Grecìa Salentina. Great food, hospitality, and Griko culture make this end-of-summer event one of the most genuine festivals in the Lecce area. Admission is free.
The 2026 Sceblasti Festival will be held in Zollino, in the Grecìa Salentina (province of Lecce), in early August. Local sources indicate the dates of August 2-3, 2026, continuing the tradition of holding the festival in the first ten days of the month. The absolute star remains the scèblasti, the rustic durum wheat focaccia topped with olives, onions, zucchini, capers, tomatoes, and chili, baked in wood-fired ovens and served hot at the food stalls set up in Piazza Sant'Antonio and the historic center.
The evening will be animated by live music and performances of pizzica and Salento folk music. The complete program, including times and artist names, will be published by the Pro Loco of Zollino in the weeks preceding the event. Admission is free.

Zollino is located in inland Salento, about 25 km from Lecce. By car, it can be reached via the SS16 and the provincial roads of Grecìa Salentina. The town is also served by the Ferrovie del Sud Est railway line (Zollino station).
Admission is free. There are food stalls, refreshment points, and restrooms in the square. Food and drinks are available for purchase at the stalls.
