An itinerary of taste through the houses of Raveo, in the gastronomic heart of Carnia
When the Carnia mountains are dressed in snow, the small village of Raveo, in the province of Udine, comes alive for one of Friuli's most cherished food and wine festivals: Sapori di Carnia. On the second Sunday of December, from 9 am until late afternoon, the entire village becomes a widespread showcase of mountain flavours, with houses and courtyards (the cjase) opening up and transforming into tasting points along a true itinerary of taste.
The absolute protagonist is Carnian cuisine, humble and generous at the same time. At the stands and in the houses, you can taste frico (crispy or soft, made with cheese and potatoes), cjarsons — the sweet-and-savory ravioli that are a symbol of Carnia — legume soups, cured meats, and mountain pasture cheeses, all accompanied by local wines and grappas. There is also an exhibition market of small local producers, where you can buy preserves, honeys, cheeses, and specialties prepared according to ancient recipes.
What makes Sapori di Carnia special is the involvement of the entire community: it is the families of the village, gathered around the Pro Loco Raveo (local tourism board), who prepare and serve the dishes, preserving and passing down recipes that would otherwise risk being lost. Folk music, shows, and artisan markets liven up the village streets throughout the day, creating a warm and authentic atmosphere in the heart of the Alpine winter.
With almost forty years of history — the 2026 edition is the 38th — the event has established itself as a key appointment for those who want to discover Carnia's gastronomy in a genuine setting, far from the most touristy festivals. Supported by the Municipality and deeply rooted in the territory, it is the best way to taste the mountain soul of Friuli Venezia Giulia before the Christmas holidays.
