About Sapori di Carnia

Sapori di Carnia is the great winter food and wine festival of Raveo (UD): on the second Sunday of December, the entire village transforms into an itinerary of taste, with houses and courtyards serving the symbolic dishes of the Friulian mountains — frico, cjarsons, legume soups, cured meats, and cheeses — accompanied by local wines and grappas, folk music, and an artisan market. Now in its 38th edition, it is one of the most beloved winter sagre (festivals) in the Triveneto region.

Carnia in a Winter Day

When the Carnia mountains are dressed in snow, the small village of Raveo, in the province of Udine, comes alive for one of Friuli's most cherished food and wine festivals: Sapori di Carnia. On the second Sunday of December, from 9 am until late afternoon, the entire village becomes a widespread showcase of mountain flavours, with houses and courtyards (the cjase) opening up and transforming into tasting points along a true itinerary of taste.

Dishes That Tell the Story of the Mountains

The absolute protagonist is Carnian cuisine, humble and generous at the same time. At the stands and in the houses, you can taste frico (crispy or soft, made with cheese and potatoes), cjarsons — the sweet-and-savory ravioli that are a symbol of Carnia — legume soups, cured meats, and mountain pasture cheeses, all accompanied by local wines and grappas. There is also an exhibition market of small local producers, where you can buy preserves, honeys, cheeses, and specialties prepared according to ancient recipes.

A Festival for the Whole Village

What makes Sapori di Carnia special is the involvement of the entire community: it is the families of the village, gathered around the Pro Loco Raveo (local tourism board), who prepare and serve the dishes, preserving and passing down recipes that would otherwise risk being lost. Folk music, shows, and artisan markets liven up the village streets throughout the day, creating a warm and authentic atmosphere in the heart of the Alpine winter.

An Established Tradition

With almost forty years of history — the 2026 edition is the 38th — the event has established itself as a key appointment for those who want to discover Carnia's gastronomy in a genuine setting, far from the most touristy festivals. Supported by the Municipality and deeply rooted in the territory, it is the best way to taste the mountain soul of Friuli Venezia Giulia before the Christmas holidays.

Sapori di Carnia — edition 2026

The 38th edition of Sapori di Carnia is scheduled for December 2026 in Raveo, according to the usual placement on the second Sunday of the month. The village will open its houses and courtyards for the itinerary of taste featuring frico, cjarsons, legume soups, cured meats, and cheeses, accompanied by wines and grappas, a market, and folk music.

Sapori di Carnia returns in 2026 with its 38th edition, reprising the formula that made the festival famous: the entire village of Raveo transforms into a widespread showcase of Carnian gastronomy, with houses opening to serve traditional dishes. The official date, expected on the second Sunday of December, will be confirmed by Pro Loco Raveo in the weeks prior.
