In the upper valley of the Imperia hinterland, the tiny municipality of Armo (Province of Imperia) celebrates the feast of San Bernardo, patron saint of the hamlet of San Bernardo d'Armo, every August 14th. The religious dimension is joined by the Sagra du Pan Fritu, dedicated to a specialty of Ligurian peasant cuisine: stale bread re-fried in local extra virgin olive oil.

A 're-use' cuisine that became a festival

Pan fritu was born from the peasant ingenuity of wasting nothing: stale bread, re-fried in local EVOO, becomes a flavorful and iconic dish. The festival celebrates its value, transforming a simple 're-use' recipe into a moment of celebration and pride for the community. Food stalls open in the late afternoon, after the morning's religious services.

The festival, recognized among Liguria's Authentic Events, marks the day with a religious service, a procession, and the evening festival. In a hinterland village where life retains ancient rhythms, the Sagra du Pan Fritu represents a rare moment of collective gathering, capable of attracting residents from nearby hamlets and many who, during Ferragosto, return to their roots in the hinterland of the Riviera dei Fiori.
