What are lombrichelli?

Lombrichelli are a long, hand-rolled pasta made with just two ingredients: water and flour, with no eggs. Thick and irregular, their shape resembles the small earthworms (lombrichelli) from which they take their name. Once known as the "poor man's pasta," they originated in the rural kitchens of northern Lazio as a humble yet nourishing meal. Today, they are a true gastronomic symbol of the area and the star of this dedicated festival.

During the event, the lombrichelli are served with a variety of sauces: amatriciana, truffle, ortolana (with garden-fresh vegetables), meat ragù, or simply with tomato and basil. Alongside the signature dish, there is no shortage of other local traditional flavors.
