About Gricia Festival

Every year around mid-August, Grisciano—a small village in the municipality of Accumoli, in the province of Rieti—hosts one of the most authentic festivals in the Lazio region: the Pasta alla Gricia Festival. Along the Salaria road, the Amici di Grisciano Association celebrates the dish considered the mother of Amatriciana, prepared with guanciale, pecorino romano, and black pepper according to the ancient shepherds' recipe. A celebration of taste and memory that, following the 2016 earthquake, has also become a symbol of rebirth and community.

Every summer, the village of Grisciano, a hamlet in the municipality of Accumoli in the province of Rieti, fills with the aroma of guanciale and pecorino for the Pasta alla Gricia Festival. The event, one of the longest-running and most heartfelt in the upper Rieti valley, pays homage to a very humble and ancient dish: pasta seasoned with guanciale, pecorino romano, and plenty of black pepper, without tomato. Gricia is indeed considered the original recipe, the mother of Amatriciana and the ancestor of Carbonara and Cacio e Pepe.

Where Gricia was born: Grisciano and its tradition

It is no coincidence that this festival is held here. According to a deeply rooted local tradition, the very name of the dish is linked to Grisciano: it was the shepherds of these mountains, between Lazio, Umbria, Marche, and Abruzzo, who carried pasta, guanciale, pecorino, salt, and pepper with them—simple ingredients to transform into a hearty meal during transhumance. In Grisciano, Gricia has always been prepared this way, and it is here that the inhabitants proudly claim its origins.

The heart of the festival is, of course, the large cauldrons of pasta alla gricia, served to the public by local volunteers. Alongside the iconic dish, there are other specialties of Rieti cuisine and typical local products, from pecorino to cured meats, in a gastronomic journey that highlights the excellence of the Apennine territory. After the 2016 earthquake: the festival as a symbol of rebirth

Grisciano and the entire municipality of Accumoli were among the areas most affected by the earthquake of August 24, 2016, which devastated the Amatrice and Accumoli area. Despite the wounds, the community insisted that the festival continue: as early as the year following the quake, the celebration returned as a sign of redemption, normalcy, and gratitude toward the rescuers. Since then, the Gricia Festival is not just a gastronomic event, but a collective gesture of attachment to one's roots and the rebirth of a territory that refuses to give up.

Atmosphere, music, and community

The event brings together outdoor dining tables, folk music, and festive moments that enliven the hamlet for the entire day. Past editions have featured folk groups and spaces dedicated to families and children, in a genuine atmosphere that attracts visitors every year from the Rieti area, the nearby Ascoli region, and all over Lazio. The 32nd edition of the Pasta alla Gricia Festival takes place in Grisciano di Accumoli (Rieti) on August 17 and 18, 2026, starting on the afternoon of Saturday the 17th and culminating on Sunday the 18th. As per tradition, the absolute star is the pasta alla gricia served along the Salaria road by the Amici di Grisciano Association.

In 2026, the Pasta alla Gricia Festival in Grisciano returns for its 32nd edition, on Saturday August 17 and Sunday August 18, in the setting of the small village of Accumoli, in the province of Rieti. The festival begins on Saturday afternoon and continues throughout the day on Sunday, with the distribution of pasta alla gricia prepared by local volunteers, typical products of the Rieti territory, and moments of music and conviviality.

The detailed program for the 2026 edition, with times and guests, will be released by the organizers in the weeks leading up to the event on the channels of the Amici di Grisciano Association and the Pro Loco of Accumoli.
