A humble dish turned into a celebration

The Panzanella Festival in Trevignano Romano celebrates one of the most authentic dishes of Lazio's peasant cuisine: stale bread soaked and dressed with tomatoes, onions, basil, and extra virgin olive oil. A simple recipe, born out of a desire to waste nothing, which on a summer evening brings together residents and visitors along Via delle Scalette, the picturesque street that winds through the village's historic center. In 2026, the event celebrates its 19th edition, confirming its status as one of the most anticipated dates in the Trevignano summer calendar.

The Il Cormorano Association and the spirit of the evening

The festival is organized by the Il Cormorano Association, under the patronage of the Municipality of Trevignano Romano and in collaboration with the local Tourist Board. The format is that of a truly genuine village feast: the association's volunteers prepare and offer the dinner—unlimited panzanella, pasta, wine, water, and fried pastries—while music accompanies the evening until late. The hallmark of the event is its charitable vocation: all proceeds from the evening are donated to charity, turning a dinner among friends into a concrete gesture of collective generosity.

Panzanella, the queen of the Lazio summer

In Lazio, panzanella is much more than a dish: it is a summer ritual. Stale homemade bread is soaked in water, squeezed, and dressed with ripe tomatoes, onion, fresh basil, salt, and a drizzle of oil. In Trevignano, it is enjoyed in its most classic version, served in abundance and accompanied by local products. In past editions, the menu has also featured pasta all'arrabbiata and the essential fried donuts, all strictly provided by the organizing association.

Trevignano Romano, pearl of Lake Bracciano

The festival is also an excellent opportunity to discover Trevignano Romano, a village in the Metropolitan City of Rome Capital, nestled on the northern shore of Lake Bracciano, in the heart of the Bracciano-Martignano Regional Natural Park. The town, dominated by the ruins of the Orsini Fortress, offers one of the most beautiful lakefronts in Lazio, medieval alleys, the Church of the Assumption with its 16th-century frescoes, and a gastronomic tradition linked to lake fish. In summer, the village comes alive with a busy calendar of events, of which the Panzanella Festival is one of the most convivial.

An evening for everyone

Admission is free and participation is open to all: families, young people, and tourists gather around tables set up in the street, amidst the scents of cooking, conversation, and live music. The intimate scale of the festival—a single evening, one street, one symbolic dish—makes it an authentic experience of village social life, far from large mass events and faithful to the spirit of traditional festivals of the past.
