The gastronomic spring of asparagus in Nalles restaurants
The Nalser Spargelwochen (Nalles Asparagus Weeks) are a spring food and wine festival that brings Nalles/Nals to life every year. This small town is nestled along the Adige Valley in the province of Bolzano, in the heart of Trentino-Alto Adige. For several weeks, from late March to May, local restaurants dedicate their menus to asparagus, the tender and prized shoot that finds ideal growing conditions here.
The sandy, well-drained soil along the Adige River, combined with the mild climate of the basin, offers the perfect environment for growing asparagus. Along with the neighboring towns of Terlano, Vilpiano, and Andriano, Nalles is part of the so-called South Tyrolean "asparagus triangle," where this seasonal specialty is hand-harvested and brought fresh to the table. The quality of local asparagus is renowned far beyond the town's borders.
During the Weeks, chefs at participating venues reinterpret asparagus in both traditional and creative ways: from the classic serving with speck and Bolzano sauce to more modern and sophisticated proposals. Each dish is paired with white wines from the Nals Margreid Winery, the local wine cooperative whose Sauvignon and Pinot Bianco enhance the vegetable's delicate flavor. Participating restaurants include historic local names such as Ristorante Apollonia, Gasthof Jäger, Pizzeria Figl, Stachelburgkeller, Ristorante Pircher, and the Albergo Ristorante zum Rosenbaum.
The event, organized by the Nalles Tourist Association, is an ideal opportunity to discover the deep bond between the town and its land, during a time of year when the blooming orchards make the landscape of the lower Adige Valley even more picturesque.
The Nalles Asparagus Weeks are part of the broader spring gastronomic tradition of South Tyrol, where the asparagus season is a true culinary ritual. For visitors, it is an authentic way to experience the town of Nalles and the Province of Bolzano, amidst genuine flavors, rural culture, and typical South Tyrolean hospitality.
The 2026 Nalser Spargelwochen were held from March 24 to May 25, 2026, following the South Tyrolean asparagus season. For over two months, participating restaurants in Nalles enriched their menus with fresh asparagus dishes, served both in the classic version with speck and Bolzano sauce and in more creative interpretations.
Each dish was paired with white wines from the Nals Margreid Winery. The calendar also included hiking and cycling excursions in the Adige Valley, with visits to the asparagus fields and meetings with the farmers. The event was organized by the Nalles Tourist Association, in the town of Nalles, province of Bolzano.
Nalles is located along the Adige Valley, between Bolzano and Merano. By car: A22 motorway exit Bolzano Sud or Bolzano Nord, then the SS38 towards Merano. By train: Bolzano or Terlano-Andriano station, continuing by bus to Nalles.
The event takes place in individual participating restaurants in town: direct booking at the venues is recommended during the Asparagus Weeks. There is no entrance fee; you pay for your meal at the restaurant.
