It is miskiglio (or mischiglio), a dough made from mixed flours — soft wheat, broad beans, chickpeas, sometimes barley — which in past centuries allowed farmers to feed themselves when wheat was scarce because it was almost entirely destined for tax payments. From that necessity was born one of the most characteristic pastas of Basilicata, today a Traditional Agri-food Product (PAT) and a Slow Food Presidium.

The Maccaruni cu Fierr Festival is the way Calvera has chosen to celebrate this heritage: "maccaruni cu fierr" are pasta worked by hand and rolled around a thin iron, seasoned with cacioricotta cheese and dried pepper flakes, according to the ancient taste of the Serrapotamo.

The festival is not an isolated event, but part of the La Via del Miskiglio project, a cultural route that unites four municipalities in the valley — Calvera, Teana, Fardella, and Chiaromonte — to jointly enhance one of the oldest traditions of this land.
