About IncantEVOle

IncantEVOle is the Extra Virgin Olive Oil Festival of Bitonto, in the heart of Puglia. Launched in 2025 by the local municipality, it celebrates EVO oil as the region's signature product through conferences, showcooking, tastings, concerts, and performances that bring the squares, courtyards, and historic sites of the old town to life. A widespread event that weaves together gastronomic culture, olive-growing traditions, and entertainment, marking Bitonto as the first Apulian city to establish its own Olive Oil Community.

IncantEVOle: Bitonto, the capital of EVO oil

IncantEVOle - Extra Virgin Olive Oil Festival is the event through which the Municipality of Bitonto, in the province of Bari, celebrates extra virgin olive oil as the iconic product of its territory. Established in 2025, the festival transforms the city's historic center into a widespread journey of taste, culture, and entertainment, bringing one of Puglia's most authentic vocations—olive growing—back to the center stage.

A widespread festival in the historic center

The IncantEVOle format is that of a widespread event: squares, courtyards, towers, and historic sites in Bitonto become stages for a program that combines food and wine, music, and cultural insight. From the Torrione Angioino to Porta Baresana, and from Piazza Aldo Moro to Piazza Cattedrale, the public is invited to discover the deep bond between the city and its oil, strolling through tastings, workshops, and shows.

The program: conferences, showcooking, and performances

The IncantEVOle schedule is intentionally multidisciplinary and suitable for the whole family. Recurring highlights include:

  • Conferences and meetings with olive industry experts, agronomists, and institutions;
  • Showcooking and 'Corti del Gusto' (Courtyards of Taste) with chefs and masters of local oil-based cuisine;
  • Tastings and street food in the heart of the old town;
  • Concerts and live performances, ranging from classical music to comedy;
  • Rural trekking and guided tours among oil mills, dry-stone walls, and ancient olive groves;
  • Workshops dedicated to children.

The Olive Oil Community and the Ravanas Award

IncantEVOle is not just a celebration; it is also a tool for regional promotion. During the event, Bitonto presented the first Olive Oil Community in Puglia, joining the national project promoted by the Città dell'Olio association. The festival also hosts the Ravanas Award, dedicated to the memory of agronomist Pierre Ravanas, awarded to those who distinguish themselves for their human and social commitment, innovation, research, and entrepreneurship in the olive sector.

Bitonto and the Apulian olive tradition

With its boundless heritage of olive groves, Bitonto has been a hub of Apulian olive growing for centuries, famous for the 'Cima di Bitonto' cultivar. IncantEVOle gathers and enhances this legacy, offering the community and visitors an authentic narrative of extra virgin oil as a pillar of the territory's identity, economy, and culture. For Puglia and the entire Municipality of Bitonto, the festival represents a major attraction that combines agri-food promotion, tourism, and high-quality entertainment.

IncantEVOle — edition 2026

Following the success of the first edition, the organizers have announced their intention to host IncantEVOle again in 2026. The official dates and program for the 2026 edition have not yet been announced by the Municipality of Bitonto; the festival has traditionally taken place in September. Information will be updated as soon as it becomes available.

The second edition of IncantEVOle - Extra Virgin Olive Oil Festival in Bitonto is expected in 2026. At the moment, the Municipality has not yet published the official dates or the program. The administration has, however, stated that they are already working on an expanded edition, with particular attention to the 'Corti del Gusto' format. This page will be updated with dates, locations, and the program as soon as they are released.

Where

The festival takes place in the historic center of Bitonto (BA), between the Torrione Angioino, Porta Baresana, Piazza Aldo Moro, and Piazza Cattedrale.

How to get there

By car: take the Bitonto exit from the SS16bis, just a few kilometers from Bari. By train: the Bitonto station is served by the Ferrotramviaria line (Bari-Barletta). By plane: Bari-Palese airport is approximately 15 km away.

Events in the squares for the 2025 edition were free of charge; specific tastings and activities may have required a contribution. Please check the official program of the Municipality of Bitonto for the upcoming edition.
