The Festival of the Torta al Testo cooked under the ashes takes place in Sant'Egidio, a hamlet of the Municipality of Perugia near the regional airport, in the province of Perugia. Organized by the ASD APS Sant'Egidio, it is one of the longest-running events in the Umbrian territory, capable of preserving and passing down an ancient gesture of peasant cuisine.
The torta al testo as it once was
The absolute protagonist is the torta al testo, the symbolic focaccia of Umbria, prepared here according to the traditional method: cooked under the ashes, on a red-hot stone covered in embers, which gives it a crispness and flavor impossible to replicate elsewhere. It is enjoyed stuffed in many ways, accompanied by:

- Local wines and cheeses
- Typical desserts, including the curious torta al testo with Nutella
Music, workshops, and games for children

The event is held under a large covered structure in via del Deltapiano, at the hamlet's community center, and is one of the most anticipated gastronomic events of the Perugian summer.

The Festival of the Torta al Testo cooked under the ashes 2026 returns to Sant'Egidio, a hamlet of Perugia, from July 31 to August 9. Under the large covered structure in via del Deltapiano, the torta al testo is prepared as tradition dictates, cooked under the ashes on a red-hot stone, and served stuffed in many variations along with typical Umbrian wines, cheeses, and desserts. Live music evenings, educational workshops, and games for children accompany the dining experience. Dinner reservation is mandatory via the official website.
