Celebrating the "King of Vegetables" in the heart of the Viterbo Tuscia
In the town of Canino, a village in the Viterbo Tuscia overlooking the Maremma Laziale, spring brings one of the most cherished festivals in the Upper Tuscia region. The Canino Green Asparagus PGI Festival celebrates the sprout that locals affectionately call the "King of Vegetables": a particularly tender and flavorful asparagus, whose quality stems from the volcanic, mineral-rich thermal waters of the territory. Its PGI status certifies its origin and unique characteristics.
For an entire weekend, Canino's historic center transforms into a journey of taste and festivity, stretching from Via Roma to Piazza Valentini, through Corso Matteotti and the town squares. The streets are filled with craft markets, food stalls, exhibitions, and entertainment areas. Live music, street performers, and games for children create a convivial atmosphere that brings together both residents and visitors.
The heart of the event remains its gastronomy. In the traditional cantinoni (pop-up taverns) set up by local associations and groups, you can savor the most representative dishes of the region, naturally featuring Canino Green Asparagus PGI: from omelets to pasta dishes, street food to traditional peasant recipes. Tastings are paired with local wines and typical products of the Tuscia, a land also renowned for its extra virgin olive oil.
The climax of the festival is the preparation of the world's largest omelet: a spectacular performance that draws a large crowd every year. In a two-meter diameter pan, over a thousand eggs and more than 100 kilos of asparagus are cooked in a collective ritual that blends taste, tradition, and community spirit.
Organized by the Pro Loco in collaboration with the Municipality of Canino, the festival is much more than a food fair: it is an opportunity to discover an authentic village in the province of Viterbo, in the Lazio region, amidst medieval alleys, popular traditions, and excellent local products. An unmissable event for food and wine lovers and those wishing to experience spring in the Tuscia.
The 24th edition of the Canino Green Asparagus PGI Festival was held from Friday, April 17 to Sunday, April 19, 2026, in the historic center of Canino, in the province of Viterbo. The program alternated between gastronomic events, music, and entertainment, confirming the festival as one of the most anticipated spring events in the Viterbo Tuscia.
Among the novelties of the year was the "aperiasparago", an aperitif featuring tastings of wines and local products. The grand finale took place on Sunday with the preparation of the world's largest omelet, cooked in a two-meter pan with over a thousand eggs and more than 100 kilos of asparagus.

By car: Canino can be reached via the SS Aurelia (Montalto di Castro exit) or the Via Cassia, in the Upper Viterbo Tuscia. By train: the nearest station is Montalto di Castro on the RomeโGrosseto line, then continue by bus or car. By plane: Rome Fiumicino airport is about an hour and a half away.
Free entry to the festival. Dishes and tastings at the stalls and cantinoni are paid.
Arrive early on Sunday to watch the preparation of the giant omelet. Wear comfortable clothing for walking through the historic center.
