A week to celebrate carbonara in Cagli's restaurants
Every spring, the village of Cagli, in the heart of the hinterland of the Province of Pesaro and Urbino (Marche), transforms one of the most beloved dishes of Italian cuisine into the absolute protagonist. Cajrbonara - The Seven Days of Carbonara is a widespread food and wine event that for an entire week invites residents and visitors to rediscover carbonara in the kitchens of the town's eateries.
This is not a traditional festival with stalls in the square, but a culinary journey involving about fifteen restaurants, pubs, and pizzerias in the municipal area. Each establishment offers its own interpretation of the dish, allowing food lovers to create their own itinerary among the different venues. Carbonara is served in many forms:
Alongside the classic recipe - guanciale, pecorino (preferably Roman), fresh egg yolks, and black pepper - some establishments offer variations with pancetta or sausage, while purists remain faithful to the traditional preparation.
In Cagli, carbonara is not a recent trend: local tradition links it to the charcoal burners (carbonai), the workers of the woods in the Apennines who seasoned their polenta with the few flavorful and easily available ingredients they had. Hence the dish's connection to the territory and to a simple cuisine that has become a symbol of conviviality today.
The event is marked by April 6th, a date that since 2017 has been celebrated as World Carbonara Day. Around this anniversary, the Centro don Sturzo organizes the week of celebrations, with the patronage of the Municipality of Cagli and the collaboration of Confesercenti and Confcommercio.
A perfect opportunity to discover Cagli, an elegant town of art along the ancient Via Flaminia, combining a stroll through the historic center with a delicious stop at its eateries.
Cajrbonara 2026 was held in Cagli (PU) from Monday, April 6th to Sunday, April 12th, opening on World Carbonara Day. The event, promoted by the Centro don Sturzo with the patronage of the Municipality of Cagli and the collaboration of Confesercenti and Confcommercio, involved about fifteen local eateries.
For seven days, participating restaurants, pubs, and pizzerias offered carbonara in its many forms: spaghetti, paccheri, rigatoni, mezze maniche, the polenta version, and carbonara pizza, alongside the traditional recipe based on guanciale, pecorino, eggs, and black pepper.
Cajrbonara does not feature a program of shows in the square, but a week of gastronomic offerings in the participating eateries of the municipality of Cagli.
Offerings include: carbonara with spaghetti, paccheri, rigatoni, the polenta version recalling the dish's rustic origins, and carbonara pizza in participating pizzerias. Some establishments offer variations with pancetta or sausage alongside the classic recipe with guanciale, pecorino, eggs, and black pepper.

The initiative takes place in participating restaurants, pubs, and pizzerias in the Municipality of Cagli (PU), in the Marche region. There is no single venue: each establishment offers its own dedicated menu.
By car: Cagli is located along the SS3 Flaminia, about 40 minutes from Pesaro and a short distance from Gubbio and Urbino. By train: the nearest station is Fano, from which you can continue by bus or car towards the hinterland.
