A convivial evening hosted by the Pro Loco in the heart of Valsessera
The Bagna Cauda Dinner organized by the Pro Loco of Ailoche is one of those events that captures the most authentic soul of small mountain villages. Held at the association's headquarters in Località La Valle, it brings together locals, friends, and visitors over a signature dish of Piedmontese cuisine. This is not a large-scale festival, but rather a community moment where good food becomes an opportunity for connection and warmth in the heart of Valsessera, in the municipality of Ailoche, in the province of Biella, Piedmont.
Bagna cauda is one of the most beloved and iconic dishes of Piedmont: a warm sauce prepared with garlic, anchovies, and olive oil, served in a terracotta fojot kept over a small flame. It is used as a dip for raw and cooked seasonal vegetables, ranging from cardoons and peppers to potatoes and Jerusalem artichokes. The entire evening revolves around this ritual dish, meant to be enjoyed slowly and in good company, accompanied by the house aperitif and other tasty delicacies prepared by local volunteers.
Ailoche is a small mountain municipality nestled on a ridge at the north-eastern edge of the Biella province, immersed in the nature of the Valsessera. Its territory, rich in forests and a long history linked to ancient iron and metal mines, is part of the Valsesia Supervolcano area. In such a close-knit setting, the work of the Pro Loco is essential: throughout the year, the association enlivens village life with dinners, gatherings, and initiatives that keep the community spirit alive, from traditional meals to summer events.
The bagna cauda dinner is a cold-season classic, when the warmth of the table and good company is the best way to spend an evening in the village. It is an ideal opportunity for those wishing to discover the genuine hospitality of the Biella region and savor a traditional dish prepared according to home-style recipes.
As this is an event with limited seating at the association's premises, it is always recommended to check the details and book by contacting the Pro Loco of Ailoche.
