The Baccalà Festival of Borgoricco, a town in the plain north of Padua in the Roman Graticolato area, is dedicated to one of the most beloved dishes of Venetian tradition. Cod, the rehydrated stockfish that has entered the cuisine of Veneto over the centuries from Northern Europe, is presented here in all its forms: whipped, Vicentina style, stewed, in salad, and fried, up to the most innovative interpretations.
