Every October, in Casumaro, a hamlet of the Municipality of Cento in the province of Ferrara, the Autumn Snail Festival returns: the autumn version of the famous festival that brings snails to the table in the cooler months, a humble but precious ingredient of Emilian peasant cuisine. For two weekends, the covered and heated gastronomic stand at the sports field in Via Boschetti offers a rich menu, from first courses with snails to more autumnal recipes like wild boar with polenta and tripe, accompanied by musical evenings, markets, and moments of celebration for the entire community.

The Autumn Snail Festival is the autumn edition of the historic festival in Casumaro, a hamlet straddling the Municipality of Cento (in the province of Ferrara) and the Modena area. After the big summer festival in July and August, ASD Casumaro Calcio renews the appointment with traditional cuisine every October, when the cooler evenings make it even more pleasant to gather around the tables of the covered and heated stand at the sports field in Via Boschetti.

The Snail, Queen of Peasant Cuisine

The absolute protagonist is the snail, a humble but precious ingredient of the peasant cuisine of these lands. On the menu, you'll find it in all its forms: in bruschetta, in the festival's tortelli, in tagliatelle with snails and mushrooms, in penne with snails and gorgonzola, in bigoli alla borgognona, and in snail and potato soup with chard. Among the main courses, the snails alla casumarese, fried, alla borgognona, or in the Mexican version, snail and pancetta skewers, and potato nests with snails and pistachio crumble stand out.

Alongside the queen of the festival, the menu is enriched with the great classics of Emilian cuisine and typical seasonal dishes: pumpkin cappellacci, tortellini, truffle rosettes, tripe, wild boar with polenta, and other meat specialties, up to traditional desserts.
