About Aspresi Stringozzi Festival

Every summer, the Aspresi Stringozzi Festival brings the historic center of Casperia to life. Located in the Sabina region of the Rieti province, this medieval village is a proud recipient of the Touring Club Italiano's Orange Flag. For five nights, the local Pro Loco celebrates stringozzi—a traditional egg-free pasta made from water and flour—served with rich ragù or simple white sauce, alongside grilled meats. With food stalls, free admission, and lively evenings featuring the best ballroom dance orchestras, the village transforms into a grand summer celebration nestled within the charming alleys and squares of one of Lazio's most picturesque spots.

The signature festival of Casperia

The Aspresi Stringozzi Festival is the most anticipated summer event in Casperia, a small medieval village in the Sabina area of the Rieti province, in the heart of Lazio. Organized by the Pro Loco of Casperia, the event draws thousands of visitors each year between late July and early August, celebrating a dish that has become the community's gastronomic emblem.

What are Aspresi stringozzi?

Stringozzi are long, rectangular-cut noodles widely popular in central Italy and of ancient Umbrian origin, made from a simple dough of water and flour—no eggs. The adjective "aspresi" refers to the village's ancient name, Aspra, which Casperia held until 1947. Hand-prepared according to the traditional recipe, the stringozzi are served with ragù or in bianco (plain), accompanied by classic grilled meats and local Sabina wines.

The village hosting the festival

Casperia is one of the most beautiful and well-preserved villages in the region. Its historic center, closed to traffic and filled with stone alleys, arches, and stairways, has been awarded the Orange Flag by the Touring Club Italiano. During the festival, the medieval streets fill with long tables, lights, and music, offering visitors the chance to discover an authentic corner of Sabina far from the main tourist circuits.

Evenings of gastronomy and dance

Every evening, food stalls open at dusk, offering a traditional menu of stringozzi, grilled dishes, and local specialties. After dinner, the program continues with dance evenings featuring the best ballroom orchestras, complete with an open-air dance floor and entertainment for all ages. The atmosphere is that of a genuine village festival, where culinary tradition, conviviality, and folk music blend together until late at night.

A long-standing tradition

Now in its fourth decade, the Aspresi Stringozzi Festival is much more than a food event: it is a moment of collective identity where the entire Casperia community comes together to welcome guests from all over Lazio and beyond. It is the perfect opportunity to combine the discovery of a medieval Sabina village with the pleasure of authentic traditional cuisine.
