The Aspresi Stringozzi Festival is the most anticipated summer event in Casperia, a small medieval village in the Sabina area of the Rieti province, in the heart of Lazio. Organized by the Pro Loco of Casperia, the event draws thousands of visitors each year between late July and early August, celebrating a dish that has become the community's gastronomic emblem.

What are Aspresi stringozzi?

Stringozzi are long, rectangular-cut noodles widely popular in central Italy and of ancient Umbrian origin, made from a simple dough of water and flour—no eggs. The adjective "aspresi" refers to the village's ancient name, Aspra, which Casperia held until 1947. Hand-prepared according to the traditional recipe, the stringozzi are served with ragù or in bianco (plain), accompanied by classic grilled meats and local Sabina wines.

The village hosting the festival

Casperia is one of the most beautiful and well-preserved villages in the region. Its historic center, closed to traffic and filled with stone alleys, arches, and stairways, has been awarded the Orange Flag by the Touring Club Italiano. During the festival, the medieval streets fill with long tables, lights, and music, offering visitors the chance to discover an authentic corner of Sabina far from the main tourist circuits.
