Saperi e Sapori Fondani began in San Magno, a rural area of the municipality of Fondi in the province of Latina (Lazio), as a simple local feast organized by the volunteers of the San Magno Committee. Within a few editions, the event grew into a full week-long festival, attracting visitors from across lower Lazio and the nearby Campania border. The title says it all: the sapori (flavors) of the peasant cuisine of the Fondi Plain and the saperi (knowledge) of a territory that thrives on vegetable gardens, greenhouses, olive groves, and produce markets.
The venue has become a hallmark: the spacious grounds of Villa Demetriana on Via Rene host stalls, a stage, play areas, and open-air dining tables every evening. The festivities begin in the late afternoon as the heat subsides and continue late into the night, with a rhythm that allows families to arrive early and younger crowds to stay until closing. Admission to the festival area is traditionally free; you only pay for what you consume at the stalls.
The culinary side is managed by the committee's cooks, who offer traditional Fondi dishes. The Fondi Plain is one of the most fertile agricultural areas in Lazio, and the menu reflects this clearly:
Alongside the kitchen, the festival maintains its grassroots spirit. Over the years, it has featured traditional games and skill competitions, youth tournaments, photographic exhibitions dedicated to local history, displays of antique agricultural tools and vintage bicycles, craft workshops, and cooking contests. Evenings conclude on the main stage with musical groups, dance performances, folk shows, and comedy nights. There is also plenty for children, with entertainment and organized games.
The most unique aspect of the event is its focus on knowledge. Over the years, the San Magno Committee has hosted discussions at Villa Demetriana on the environment and agriculture in collaboration with the Monti Ausoni and Lake Fondi Natural Park, the Land Reclamation Consortium, and local institutions. These include in-depth looks at the dairy and tomato supply chains and symbolic moments, such as the release of birds of prey that have been rehabilitated. It is this blend of food, rural culture, and land conservation that gives the festival its identity.
Those looking for a manufactured, commercial festival will be surprised: here, the organization is entirely voluntary, and the atmosphere is that of a large village dinner. This is precisely why many locals return to Fondi in August specifically for this, and why tourists vacationing on the coast between Terracina, Sperlonga, and Gaeta are happy to head inland for an evening. It is a simple, authentic way to experience the Fondi that lies beyond the beaches.

By car: Take the Frosinone exit on the A1 motorway, then the highway towards Terracina; or take the Via Appia (SS7) which passes through Fondi. From the center of Fondi, you can reach San Magno in a few minutes by following signs for Via Rene.
By train: Fondi-Sperlonga station on the Rome-Naples line via Formia, connected to the town center by bus and taxi.
The festival traditionally runs from the late afternoon (around 4:00 PM) until midnight. Access to the area is free; food stalls are pay-as-you-go with affordable prices. Parking is available in the areas adjacent to the villa.
