Paths and Flavors in the Castle is the food, wine, and cultural festival that brings the historic center of Prossedi to life. This town of just over a thousand inhabitants is located in the Province of Latina, in the heart of the Lepini Mountains, in Lazio. For three days, the medieval village becomes a continuous path: you walk through alleys, arches, and courtyards, and at every stop, you encounter a producer, a dish, and a local story.
The format is that of a widespread trail: no anonymous stands in a square, but tasting stations distributed throughout the squares and historical spaces of the town, from Piazza Plebiscito to Piazza XI Febbraio, up to the cloister and cellars of Palazzo Del Gallo and Palazzo Prossedi. The result is a slow stroll where gastronomic discovery coincides with the architectural exploration of the village.
The flavors of the Lepini Mountains
The star of the show is the lesser-known yet highly distinctive basket of goods from the area between the Lepini Mountains and the Amaseno Valley. On the table, you will find traditional rural soups, buffalo meat dishes, crostini with snails from local farms, buffalo cheeses from the Valle dell'Amaseno dairy, extra virgin olive oils from the area, and wines produced from the vineyards of Palazzo Prossedi.

On Sunday morning, the program includes "Chiocciolando" (Snail-trekking) through vineyards, farms, and archaeological treasures, a guided trek in the Prossedi countryside that connects the vineyards of Palazzo Prossedi, the snail farm of Agricola Gizzi, and the dairy products of the Valle dell'Amaseno, also touching upon the archaeological sites scattered throughout the area. It is the most direct way to understand where the products you taste a few hours later in the alleys come from.
Culture, music, and health
The event opens with a conference in the former church of Strammetta dedicated to the relationship between nutrition, health, and local traditions: an approach that places the event closer to education than a simple food festival. On Saturday evening, the cloister of Palazzo Del Gallo hosts a concert, featuring an opera repertoire reinterpreted for classical guitars, in a setting that is worth the visit alone.
Who organizes it
The event is promoted by the Municipality of Prossedi and realized with the contribution of the Lazio Region and Arsial (Regional Agency for the Development and Innovation of Agriculture in Lazio), in collaboration with Palazzo Prossedi, CAPOL, Slow Food Travel Monti Lepini, and the Slow Food Lepini and Ausoni Convivium, as well as local associations and producers. It is a territorial development project rather than a commercial event: the stated goal is to network agricultural businesses, historical heritage, and trails in an area that remains on the margins of the major tourist flows of Lazio.

2026 Edition
Three full days, from May 29 to 31, 2026, brought conferences, tastings, walks, and music to the village of Prossedi. The ribbon-cutting ceremony was dedicated to a meeting on the relationship between nutrition, health, and local traditions, followed over the weekend by the opening of the food and wine trail through the squares and historic courtyards of the town.
The most characteristic moment was the Sunday morning trek, which connected the vineyards of Palazzo Prossedi, the snail farm of Agricola Gizzi, and the Valle dell'Amaseno dairy, giving participants a concrete link between the agricultural landscape and the dishes being tasted. In the afternoon, the cellar of Palazzo Prossedi hosted the oil sensory analysis workshop curated by CAPOL and the masterclass dedicated to the best local wine vintages.
The event was organized by the Municipality of Prossedi with the contribution of the Lazio Region and Arsial, in collaboration with Palazzo Prossedi, Slow Food Travel Monti Lepini, and the Slow Food Lepini and Ausoni Convivium.

How to get there
Prossedi can be reached by car via the SS 156 of the Lepini Mountains, which connects Latina to Frosinone: the village is about 40 km from Latina, 35 km from Frosinone, and just over 90 km from Rome. Recommended motorway exits on the A1: Frosinone or Ferentino. By train, the nearest stations are Priverno-Fossanova and Frosinone, both connected to Rome Termini; from there, it is necessary to continue by car or by regional COTRAL bus services.
Parking and visiting
The historic center is pedestrianized and can be explored entirely on foot: comfortable shoes are recommended for the stone alleys and uphill paths. Parking is available at the edges of the village.

Tips
The Sunday morning trek starts early: it is advisable to arrive the evening before and stay overnight in the area, between Priverno, Roccagorga, and the farmhouses of the Amaseno Valley. Bring water and a hat for the excursion.
