Pansoti with walnut sauce in the hamlet of Gaiazza, above Ceranesi
Pansoti are one of the most representative dishes of Ligurian cuisine: lean ravioli with a characteristic plump shape, filled with a mix of wild herbs (preboggion) and ricotta. Their most famous sauce is walnut sauce, a creamy and delicate sauce that tells the gastronomic story of the Genoese hinterland. The Pansoti Festival of Gaiazza celebrates them in the heart of summer.
The festival takes place in the small hamlet of Gaiazza, in Ceranesi, in the Metropolitan City of Genoa, and is organized by the Parish of Santa Maria Assunta. The food stalls offer pansoti seasoned with walnut sauce, but also with pesto and butter and sage, accompanied by other traditional dishes. After dinner, music livens up the evening.
Although it is a small event, the Pansoti Festival of Gaiazza is an anticipated occasion, capable of attracting visitors from neighboring towns for an authentic Ligurian culinary experience in a village in the Genoese hinterland. The festival renews the bond between the parish community and the flavors of the territory every year.
The 2026 edition of the Pansoti Festival of Gaiazza is expected, as is tradition, in August. The event, organized by the parish of the hamlet, will again feature pansoti seasoned in the classic Ligurian ways, accompanied by evening music. Detailed dates will be announced by the organizers in the weeks prior.

Gaiazza is a hilly hamlet of Ceranesi, in the hinterland of Genoa. By car, you can drive up from Genova-Bolzaneto towards Ceranesi and its hamlets. It is not served by direct train transport.
Free entry; food and drinks payable at the stalls. Dates and times are announced by the parish and on local channels in the preceding days.
