So much so that it has obtained the municipal designation De.Co., a recognition that protects its recipe and inextricably links its identity to the territory. It is around this tradition that Lo Spiedo Scoppiettando revolves, the gastronomic event that transforms Thursday evenings into a delicious and convivial appointment every autumn.
The event involves the ten participating establishments of the Gussago Franciacorta Restaurant Association. Every Thursday evening, from late September to early December, they offer an identical fixed menu at the agreed price of 30 euros, designed to showcase the spit roast in its most authentic form:
Among the participating venues are historic trattorias and farmhouses in the town, from Osteria della Santissima to Trattoria Campagnola, from Caricatore to Cicceria.
The Brescian spit roast requires hours of patient cooking, slowly turned over the embers: it is a preparation that embodies the peasant culture of Franciacorta and the entire Brescian territory. The event was created to enhance this knowledge, networking the restaurateurs and offering residents and visitors a gastronomic journey that is renewed each year. A perfect opportunity to discover Gussago's cuisine and its food and wine vocation, in a municipality located close to the Franciacorta vineyards.
The 2026 edition of the event confirms the tried-and-tested formula: every Thursday evening, from late September to early December, the ten participating establishments offer the fixed menu based on 'minestra sporca', Gussago De.Co. spit roast, polenta, and baked potatoes, accompanied by local wines and concluded with De.Co. coffee and grappa. The agreed price remains 30 euros. The exact dates and the updated list of restaurants will be communicated by the Gussago Franciacorta Restaurant Association shortly before the event begins.
