Alongside the casoncelli, the food stalls offer a rich menu of traditional cuisine: tripe, spit-roast with polenta, braised meat, lard, salami, gorgonzola, and other specialities, accompanied by local wines. Everything is prepared and served by about two hundred volunteers from the Associazione Festa in Biolcheria, who wear the traditional 'biòlc' costumes: white shirts, waistcoats, and dark trousers passed down through generations, evoking the world of farmers.
Community and Solidarity
The Festa in Biolcheria is not just about gastronomy; it is also an occasion for strong cohesion for the small community of Longhena. The proceeds from the festival, in addition to covering organisational costs, are allocated to local and charitable causes, from the local football team to the parish, and even to support missionary projects.
