Every year, the Sanlorenzo Mercato on Via San Lorenzo transforms into a true map of taste for three days, entirely dedicated to sfincioneโthe fluffy focaccia that has been the undisputed king of Palermitan street food for generations. The heart of the event is the competition that pits master bakers from Palermo and its province against one another. The great schools of sfincione take center stage: the red Palermitan version, topped with tomato, onion, anchovies, and caciocavallo cheese; the white version from Bagheria, which is taller and softer; and various interpretations from Casteldaccia, Altavilla Milicia, Monreale, Aspra, and other rotating local areas. Each baker shares the origins and secrets of their family recipe in an open, direct dialogue with the public.
With a tasting ticket, visitors can sample the different varieties in the competition and become active participants: every tasting comes with the chance to vote for your favorite sfincione. The public's votes, combined with the verdict of an expert jury of journalists and food critics, determine the winner during the final award ceremony. From February 20 to 22, 2026, the Sanlorenzo Mercato in Palermo hosted the eighth edition of the Sfincione Festival, part of the market's official 10th-anniversary calendar. The protagonists were the master bakers with their competing varieties: Antico Forno Valenti with the white sfincione from Bagheria, Antico Forno Lombardo with the white and red from Altavilla, Storico Panificio La Corte, and Forno Qcino with the red sfincione, in addition to the gluten-free offering from Recupero Zero Glutine.
The public was able to sample the specialties with a 10-euro tasting ticket for five samples and vote for their favorite. The evenings were accompanied by live music with Radioflores, Dinamo Band, and We Man, while Sunday featured a talk with awards for the bakers and a children's cooking workshop hosted by DaZeroaCento.
Sanlorenzo Mercato is located at Via San Lorenzo 288, in the northern part of Palermo. By car, it is accessible from the ring road (Viale Regione Siciliana) by taking the exit toward Via San Lorenzo; parking is available nearby. Several city bus lines connect the center to the San Lorenzo area. Palermo Central Station is a few kilometers away and is connected by public transport and taxis.
Admission to the market is free. To participate in the tasting competition, you must purchase a specific ticket at the market cash desks during the event; gluten-free options are available, and children's workshops require advance booking.
