In the heart of the Rieti Sabina region, the village of Contigliano (in the province of Rieti, Lazio) dedicates an annual festival to its signature dish: the Pizzicotto Festival. It is one of those festivals born from the deep bond between a community and its cuisine, where the star is not a rare product, but a daily gesture passed down through generations. For one or more summer evenings, the village fills with aromas, long tables, and music, attracting locals, curious travelers, and visitors from neighboring towns.
The pizzicotto (in dialect lu pizzicottu) is a small bread-dough dumpling. The dough is prepared just like bread, with flour, water, salt, and yeast, and it takes its name from the gesture used to shape it: the housewife 'pinches' (pizzica) the leavened dough, pulling off small pieces that, once cooked, become soft, rounded, and slightly flattened dumplings. It is a dish born from cucina povera (peasant cooking): in the 1950s and 60s, large batches of bread dough were prepared, and any leftover dough after baking was used to create a tasty first course, ensuring nothing went to waste.
The seasoning is the simple, bold flavor of local tradition: a savory sauce made with garlic, oil, tomato, black olives, and a touch of chili pepper, following the ancient Contigliano recipe. The result is a rustic, generous dish full of character that captures the gastronomic soul of this corner of Lazio.
The festival is organized by the Pro Loco of Contigliano in collaboration with the Municipality of Contigliano and primarily takes place during the evenings of August. The heart of the event is the tasting of the 'pizzicotto' at the food stalls, accompanied by other local dishes and products, as well as Sabina wines. The rest of the evening unfolds around the tables with live music, dancing, and moments of conviviality that bring together people of all ages.
Perched on a hill overlooking the Rieti plain, just a few kilometers from Rieti and the Franciscan Holy Valley of Greccio, Contigliano is a village with a characteristic elliptical layout, dominated by the Collegiate Church of San Michele Arcangelo. Attending the Pizzicotto Festival means discovering not just a dish, but an entire landscape of traditions: those of a Sabina region still tied to the rhythms of the land, home cooking, and community life. A delicious and authentic stop for those seeking the 'Italy of the villages', far from the most tourist-heavy circuits.
For the 2026 edition, the Pizzicotto Festival confirms its summer appointment in Contigliano. As per tradition, the absolute star will be the pizzicotto, the bread-dough dumpling served with the characteristic sauce of garlic, oil, tomato, black olives, and chili pepper, available at the food stalls alongside other typical Sabina dishes and products.
The evening continues with live music and dancing, in a festive atmosphere that involves the whole community. Contigliano is located in the province of Rieti, in the Lazio region, about 10 km from the provincial capital. By car, it can be reached via the SS79 Rieti-Terni road; from Rome, take the A1 motorway to Fiano Romano and then the SS4 Salaria towards Rieti. The reference train station is Rieti, which is connected by local bus lines.
The festival generally takes place during the evenings of August, in the village's outdoor spaces (in recent editions, at the Villa Franceschini Park). Entry to the festival area is free; payment for food tastings is made at the cashier.
