Piscialetta Festival

The 2025 edition of the Piscialetta Festival took place from August 4 to 6, 2025, in the center of Surbo, in Piazza Aldo Moro. For three days, the square came alive around the piscialetta, the typical thin, wood-fired focaccia of the Salento peasant tradition, served in the classic recipe with tomatoes, onions, capers, and black olives, as well as variations featuring caramelized onions, eggplants, bell peppers, zucchini, and local cheeses.

At the food stalls, the tastings were accompanied by regional wines and craft beers. The evenings featured pizzica salentina concerts, folklore performances, entertainment for children, and markets with local crafts, all in the festive atmosphere typical of the Salento summer. Admission to the event was free.
