The absolute star is the Pertosa White Artichoke, a local variety with a very pale, thornless head, prized for its sweetness and the extraordinary tenderness of its flesh. It is grown in small family plots along the banks of the Tanagro River in the towns of Pertosa, Auletta, Caggiano, and Salvitelle. In the 1990s, it risked extinction before being rescued by the tenacity of local producers: since 2003, it has been a Slow Food Presidium, a recognition that has boosted its cultivation and fame far beyond regional borders.
The heart of the festival is Piazza G. De Marco, in the center of Pertosa, where the food stalls are set up. There are no professional caterers here: it is the local families, especially the grandmothers, who prepare dishes according to historic recipes passed down through generations. Once again, the event was promoted by the Santa Maria delle Grazie Parish with the patronage of the Municipality of Pertosa, in the province of Salerno.

Among the stalls' offerings: artichoke soup, cortecce with artichokes, scamorza with white artichoke, sausage and artichoke sandwich, stuffed artichokes, artichoke arancini, and raw artichoke in pinzimonio with local extra virgin olive oil.
The preparations are handled by local families, following recipes passed down through generations.
