Pancotto and Traditional Sanpaolese Dishes Festival

On Sunday, August 10, 2025, Piazza Aldo Moro in San Paolo di Civitate (FG) hosted a new edition of the Pancotto and Traditional Sanpaolese Dishes Festival, starting at 8:30 PM. The festival, promoted by the DeSaLeo APS cultural association and the Cumbagnii d'u Pann'cott with the patronage of the Puglia Region, brought the flavors of the Alto Tavoliere peasant tradition back to the square.

The star was the pancotto, served alongside pork soffritto with local Sanpaolese bread, local cheese, and wheat cooked with chickpeas and grape must syrup. The evening was enlivened by folk music from the group Miargento, markets featuring agricultural and artisanal products, and workshops and games for children.

Sunday, August 10, 2025 — Piazza Aldo Moro

• From 8:30 PM — opening of stands and start of tastings
• Traditional menu: pancotto, pork soffritto with Sanpaolese bread slices, local cheese, wheat cooked with chickpeas and grape must syrup, water or wine
• During the evening — performance by the musical group Miargento with folk music
• Markets featuring agricultural and artisanal products in the streets adjacent to the square
• Creative workshops and games for children

Dishes were served while supplies lasted.
