All of November, Rovato's restaurants celebrate Franciacorta's signature dish
In Rovato, in the heart of Franciacorta in the province of Brescia, November is the month of Manzo all'Olio De.Co. For thirty days, the town's restaurants dedicate their menus to this dish, recognized with Denominazione Comunale (De.Co.), a mark that certifies the deep connection between a recipe and its territory. The review, organized by the Rovato Commerce District, attracts enthusiasts and curious visitors from all over Lombardy.
Manzo all'Olio is a braised dish that cooks slowly in olive oil with anchovies, capers, breadcrumbs, and herbs, until it becomes very tender. It is traditionally served with polenta, especially the red-haired corn variety, a local type recovered in recent years. It is a dish from the humble Brescian cuisine that has endured through the centuries and is now a recognized gastronomic symbol.
Every year, at least fifteen Rovato restaurants participate in the review, offering menus dedicated to Manzo all'Olio at controlled prices and pairings ranging from tradition to contemporary reinterpretations. Menu prices generally range from 12 to 40 euros depending on the offering, and reservations are often recommended.
The historic capital of cattle markets in Franciacorta, Rovato has beef as a fundamental part of its identity.
