In the heart of the Salento region, halfway between Brindisi and Lecce, the town of San Pancrazio Salentino hosts the Festival of Flavors every summer, one of the most anticipated gastronomic events on the local calendar. Held in the town's spacious Market Area, the event draws residents and visitors from across the province of Brindisi and the surrounding Salento area, turning a summer evening into a journey through the scents and colors of traditional Apulian cuisine.
The festival was created to showcase the culinary culture of this part of Salento, a land of wheat, vineyards, and olive groves. Along the food stalls, visitors can sample local cured meats and cheeses, seafood dishes, and traditional specialties such as scarciedda, spaghetti with mussels, and classic Messapian first courses. Each dish tells the story of a territory where the countryside and the Adriatic Sea meet on the plate.
The Festival of Flavors is more than just a tasting event: the evenings are brought to life by folk music, live performances, dancing, and entertainment that capture the spirit of a traditional Salento town square festival. There are also dedicated areas for children, with inflatables and activities, making it a perfect event for the whole family. The atmosphere is typical of Apulian festivals: open-air tables, people gathering, and the shared joy of good food under the summer sky.
The event is part of the Sampancraziese Summer program, a series of summer events promoted in San Pancrazio Salentino, and is organized by the Associazione Eventi Salentini. Now in its many editions, the Festival of Flavors has established itself as a key identity-building moment for the community and an opportunity to introduce tourists to the authentic food and wine traditions of the Salento area near Brindisi.
Located in the province of Brindisi, in Apulia, San Pancrazio Salentino is a village of Messapian origin, inhabited since ancient times and developed during the Middle Ages around the church dedicated to its patron saint, Saint Pancras the Martyr. Visiting the town during the festival is the perfect way to discover the Mother Church and the traditions of a community deeply connected to its land, through gastronomy, music, and Salento hospitality.
The Festival of Flavors is set to return in the summer of 2026, bringing back the tasting of traditional Salento dishes, folk music, and entertainment that characterize the event to the Market Area of San Pancrazio Salentino. The dates for the 2026 edition have not yet been announced: the detailed program will be communicated by the Associazione Eventi Salentini through their official social media channels. The Festival of Flavors takes place in the Market Area of San Pancrazio Salentino (BR), in Apulia.
By car: San Pancrazio Salentino can be reached via the SS7 ter road and the provincial roads connecting Mesagne, Torre Santa Susanna, and Salice Salentino. From the Brindisi motorway exit, continue towards the interior of the Salento region.
By train: The town is served by the San Pancrazio Salentino railway station on the regional line.
By plane: Brindisi-Casale Airport is approximately 30 km away.
