Edition 2025 — Carbonara Festival

The first edition of the Carbonara Festival took place in Caselette, in Piazza Cays, from Friday, July 18 to Sunday, July 20, 2025. Three days dedicated to the best of Roman cuisine, with carbonara, cacio e pepe, amatriciana, pinsa romana, and live shows, with free admission. A debut that brought the flavors of the Capital to the outskirts of Turin.

The debut of the Carbonara Festival in Caselette was held in Piazza Cays from July 18 to 20, 2025, with extended hours: Friday from 6:00 PM to 11:00 PM, Saturday from 12:00 PM to 11:00 PM, and Sunday from 12:00 PM to 10:00 PM.

The stands offered the great classics of Roman cuisine — carbonara and cacio e pepe, but also carciofo alla giudia, abbacchio scottadito, porchetta d'Ariccia, and coda alla vaccinara — as well as pinsa romana in eight versions, including vegetarian and vegan options. To drink, fresh beer and wines from the Castelli Romani. On Friday and Saturday evenings, the Nova Roma Live Show enlivened the square with traditional Roman songs.
