Edition 2025 — Ancient Flavors Cerfignano
Ancient Flavors Festival 2025 — 17th edition
On August 11 and 12, 2025, Cerfignano, a village of Santa Cesarea Terme, hosted the 17th edition of the Ancient Flavors Festival. From 7:00 PM, stalls set up between Piazza Vittorio Emanuele II and the alleys of the historic center offered the great classics of Salento cuisine: homemade orecchiette, fava beans and chicory with fried bread, tajeddha of potatoes, rice and mussels, parmigiana, pittule, pizzas and focaccias, grilled meat, desserts, and spumone. Gluten-free stalls were also present. The two evenings were accompanied by folk music: Malepèciu on August 11 and Pizzica te Focu on August 12. Free admission.

2025 Edition Program
Monday, August 11
- From 7:00 PM — Opening of food stalls in Piazza Vittorio Emanuele II and the historic center
- Evening of Salento folk music with Malepèciu
Tuesday, August 12
- From 7:00 PM — Traditional Salento food stalls
- Evening of pizzica and folk music with Pizzica te Focu
Menu for both evenings: homemade orecchiette, fava beans and chicory with fried bread, Salento tajeddha (potatoes, rice, and mussels), eggplant parmigiana, vermicelli with municeddhe snails, pittule, pizzas and focaccias, grilled meat, bruschetta, legumes, panicottu, desserts, spumone, and watermelon. Gluten-free stalls available.
