Tripe, the queen of the table

In Mantuan gastronomic tradition, as in many popular Italian cuisines, tripe holds a special place: a dish from humble origins that, thanks to long cooking times and handed-down recipes, becomes a true delicacy. The Tripe Festival is held for a few days in September and focuses on this traditional dish, cooked according to local recipes. Alongside the star of the show, there are other offerings from Mantuan cuisine, in a menu that enhances the authentic flavors of the Bassa (lower Mantua region).
