Tre Forchette 2025 at The St. Regis Rome

The gala dinner took place on Monday, October 20, 2025, in the halls of The St. Regis Rome, concluding the day dedicated to the presentation of the Gambero Rosso Guida Ristoranti d'Italia 2026 held in Rome. The evening began with an aperitif signed by one of the guide's pastry chefs, paired with Trentodoc mountain bubbles.

The dinner featured signature dishes: Pino Cuttaia's (La Madia) octopus crème brûlée, Massimo Bottura's (Osteria Francescana) pasta e fagioli, Arcangelo Tinari's (Villa Maiella) black pork with chickpea hummus, Sarah Cicolini's (Santo Palato) spaghetti aglio e olio, and a herbal dessert by Michael Boivin (Campo del Drago). The pairings featured the guide's Tre Bicchieri wines. In total, the 2026 edition of the guide awarded the Tre Forchette to 55 restaurants.
