Idylio by Apreda in 2025

Throughout 2025, Idylio, a Michelin-starred restaurant within The Pantheon Iconic Rome Hotel, continued to showcase the cuisine of Francesco Apreda, based on the use of spices as an identity element. His experience in London, Tokyo, and Mumbai is reflected in a proposal that combines Mediterranean roots with oriental intensity, in the heart of Rome and the Lazio region.

It is in this context that the idea of a series of collaborative dining events took shape, capable of bringing together signature cuisine, mixology, and other chefs and bartenders. The project, developed throughout 2025, was officially presented in 2026 under the name Spices in Conversation, confirming Rome as a reference point for Italian fine dining.
