Every August 13th, San Martino Sannita, a small town in the province of Benevento, gathers around its signature dish: the paparulo 'mbuttito, a bell pepper stuffed with stale breadcrumbs, prepared by hand according to the traditional Sannio recipe. Established in 1992 by the Pro Loco Le Surte, the festival brings Via Carmine Fioretti and Piazza Roma to life with food stalls, live music, and the spontaneous conviviality of a village fair, in a town of just over a thousand residents that doubles its population for the night.

A festival born in 1992 around a rustic dish

The Paparulo 'Mbuttito Festival is the most anticipated summer event in San Martino Sannita, a small town of just over a thousand inhabitants in the province of Benevento, Campania. The event was launched in 1992 by the Pro Loco Le Surte, which chose to highlight one of the most iconic dishes of local peasant cuisine, and has returned every year on August 13th since. The 30th edition was celebrated in 2024, and the 31st in 2025: a rare continuity for a town of this size, proving how deeply the festival is woven into the local calendar.

What is paparulo 'mbuttito

In the Sannio dialect, paparulo means bell pepper and 'mbuttito means stuffed. The dish is a stuffed pepper crafted according to the local recipe: the filling is based on stale breadcrumbs, seasoned with care, and stuffed into peppers that are then cooked until soft and sweet. It is a classic 'cucina povera' dish, born from a tradition that wasted nothing, and for this very reason, it has become the town's gastronomic symbol: you won't find it on restaurant menus, you taste it here.

The food stalls

Alongside the dish that gives the festival its name, the stalls set up by the Pro Loco offer other specialties of the Sannio peasant tradition every year:

How to get there

San Martino Sannita (ZIP 82010) is about ten kilometers from Benevento. By car, it is reached via the roads connecting Benevento to San Giorgio del Sannio; highway travelers should exit at Benevento on the A16 Naples-Canosa. By train, the reference station is Benevento Centrale, from which you can continue by car or local bus connections toward the Medio Calore towns. The nearest airport is Naples-Capodichino.

Via Carmine Fioretti and Piazza Roma, in the town center. Parking is available on nearby streets, within walking distance of the festival area.

Free admission. You only pay for what you consume, per portion, at the stalls managed by the Pro Loco.
