Edition 2025 — Orecchiette nelle 'nchiosce
Eleventh edition
The 2025 edition of Orecchiette nelle 'nchiosce – On the Road was held on August 11 and 12, 2025 in the 'nchiosce of Grottaglie's historic center (TA). Eleven chefs led as many gourmet stations, offering eleven orecchietta-based dishes prepared with ingredients from Slow Food Presidia to ensure quality, local authenticity, and sustainability, including two gluten-free options.
Key ingredients included: tomato and herb pesto, mussels, Apulian black pork sausage, Acquaviva red onion, Gargano Podolico Canestrato cheese, and Ionian goat ricotta. The culinary journey was complemented by selections from local wineries and craft breweries paired with the dishes.
Workshops, podcasts, and music
Numerous workshops from the Torniamo project were featured: from handmade orecchiette preparation to the first steps of the pizzica dance, and clay modeling on the potter's wheel. Nunzia Caputo and Zia Lella (Aurelia Arces) hosted the live podcast "Le Signore delle Orecchiette," sharing family stories and handed-down recipes. The two musical evenings featured the Cardoncelli Seduti (August 11) and the Drum Fest (August 12).
