Edition 2025 — Non solo Còtta Còtt
On August 10, 2025, the historic center of Troia hosted a new edition of «Non solo Còtta Còtt», the tripe festival that the Pro Loco has been organizing since 1990. At the heart of the celebration was the signature dish, còtta còtt: beef tripe slow-cooked with tomato, celery, carrots, veal and lamb bones, and spices, according to traditional Daunian peasant recipes.
Alongside the tripe, the menu featured troccoli pasta with tomato and bread meatballs and sandwiches with local sausage, paired with Nero di Troia wine. The evening, set among the town's squares and the monumental Cathedral with its famous rose window, was enlivened by Apulian folk music, confirming the event as one of the most beloved gastronomic appointments of the summer in the province of Foggia.
