Before the travelling festival arrived in Piazza Matteotti, the gluten-free street food scene in Emilia-Romagna and Italy had already consolidated through events and gatherings of certified food trucks. These events, often organised in collaboration with entities like the Italian Celiac Association, paved the way for a format dedicated to those living with coeliac disease, offering completely gluten-free menus and educational moments. It is in this context that the experience, which in Modena takes the name Modena Senza Glutine, matures, bringing to the historic centre of the Emilian capital an event awaited by the coeliac community and food enthusiasts.
