Edition 2025 — I Grasol in Streda

The first edition of "I Grasol in Streda" was held on Sunday, February 23, 2025, in Viano, in the Reggio Emilia Apennines. A day entirely dedicated to the local tradition of pork cracklings, with the competition among pork butchers, demonstrations of lard processing, gastronomic stalls, and the return of the truffle, in continuity with the historic Viano Truffle Fair.

The first edition of I Grasol in Streda brought a day dedicated to the local tradition of pork cracklings to the center of Viano. The protagonist was the competition among pork butchers for the best fresh cracklings, with a complete demonstration of the processing: cutting of meats, curing, boiling, and pressing of the forms. There were also gastronomic stations, stalls with food and drinks, markets, and the return of the local truffle, continuing the tradition of the historic Viano Truffle Fair, from which the event drew inspiration.
