Edition 2025 — Frisa Festival
The 2025 Frisa Festival in Matino was held on Saturday, July 5, and Sunday, July 6, 2025, confirming the annual early-July appointment with Salento's gastronomic tradition. The absolute star was the frisa (or friseddha), the twice-baked bread softened in water and topped with fresh tomatoes, extra virgin olive oil, salt, and oregano, offered at the stalls set up in the town center.
Alongside the frisa, visitors were able to taste other Salento culinary specialties such as pucce, pittule, and bombette, accompanied by local wines. The two evenings were enlivened by live music and folk performances, in a convivial and popular festive atmosphere, with free admission and great public participation.
