In Carano, a village in the municipality of Sessa Aurunca in the province of Caserta, the Fresella Festival returns every summer to celebrate one of the simplest and most iconic products of Campanian cuisine. For two consecutive evenings, the streets and open spaces of the village are filled with food stalls, outdoor dining tables, and music: the fresella takes center stage, served in its classic version or with imaginative new twists.
The fresella (or frisella) is a twice-baked bread typical of Southern Italy: it is kneaded, baked, sliced in half, and returned to the oven until it becomes crunchy, allowing it to be stored for a long time. Carano is one of the many villages that make up the vast territory of Sessa Aurunca, a municipality in the far north of Campania, nestled between the extinct volcano of Roccamonfina, the Garigliano river, and the Domitian coast. It is an area with an ancient agricultural tradition, known for its extra virgin olive oil, vegetables, and wines from the Aurunco area: a context that explains why a festival can be born around a piece of stale bread and become an eagerly awaited event for the entire province of Caserta.
This is no improvised event. The Carano festival has been running for over thirty years: by 2022, it had already reached its thirty-fifth edition, always held during the first warm days of August. It is carried forward by the local community, maintaining the character of a village feast, with volunteers busy preparing dishes and setting up the space, and local families returning from afar specifically for this weekend.
The evenings begin at sunset and continue late into the night. In addition to the food, the program usually includes live music and folk dancing, with local folk groups, craft stalls, and activities designed for families and children. Admission is free: you only pay for what you consume at the stalls.
The Fresella Festival doesn't rely on special effects: it is one of those festivals where the value lies in the quality of the raw materials and the convivial atmosphere. Visitors from outside the area will find an authentic taste of Campanian peasant cuisine and can combine the evening with a visit to the historic center of Sessa Aurunca, with its Roman theater, the Ponte Ronaco, and the Romanesque cathedral, or perhaps a day on the nearby coast of Baia Domizia.
The Fresella Festival in Carano di Sessa Aurunca returns in 2026 on the first weekend of August, Saturday 1st and Sunday 2nd. As per tradition, the event occupies the streets and open spaces of the village, in the province of Caserta, with stalls managed by local volunteers.
The absolute star is the fresella, the twice-baked bread that is softened with a little water and topped with fresh tomato, extra virgin olive oil, oregano, and basil; alongside the classic recipe, the stalls usually offer variations with seasonal vegetables and local products. Opening is scheduled for the evening, from approximately 8:00 PM, and the two days continue late into the night.
Admission to the festival is free: you only pay for what you consume. The detailed program of the evenings, including any guest musical groups, is usually released by the organizers in the days immediately preceding the event through the festival's social media channels.
The festival takes place in the village of Carano, within the municipality of Sessa Aurunca (CE), throughout the streets and open spaces of the village.
By car: From the A1 motorway, take the exit for Cassino or San Vittore and continue on the SS630 towards Formia, then towards Sessa Aurunca; from Naples, you can take the SS7 quater Domiziana road up to Baia Domizia and continue inland. By train: The reference station is Sessa Aurunca-Roccamonfina, on the Rome-Formia-Naples line; from there, continue by car or local bus connections.
Stalls open in the evening, approximately from 8:00 PM. Free admission; food and drinks are available for purchase at the stalls.
August evenings are very popular: it is advisable to arrive early to find parking near the village center and be prepared for short queues at the stalls.
