Evoluzione 2025, the seventh edition

On January 27, 2025, Rome hosted the seventh edition of Evoluzione, with a packed program of meetings dedicated to high-quality extra virgin olive oil. The morning was dedicated to Italian cuisine and the role of olive oil in the UNESCO candidacy, with contributions from CREA, ISMEA, and Food Innovation Broker.

In the afternoon, at 3:30 PM, a conference on the health impact of extra virgin olive oil and the circular bioeconomy was held in collaboration with the Campus Bio-Medico University of Rome. This was followed by guided tastings and masterclasses on tasting techniques and pairings.

The 2025 Evoluzione Olive Oil Guide was presented as a reference tool for hospitality professionals. The 2025 Evoluzione Awards were presented to Acquaefarina in Trento (Pizzeria of the Year), Danì Maison in Ischia (Restaurant of the Year), Costa in Cinisello Balsamo (Menu of the Year), Capitan Cono in Rome (Gelateria of the Year), Molino7cento in Cori (Oleotourism of the Year), and Cucina & Vini in Rome (Communication of the Year).
