Cavatello Festival

From July 31 to August 3, 2025, Vitorchiano celebrated the 45th edition of the Cavatello Festival, organized by the Pro Loco in collaboration with the Municipality. For four evenings — opening on Thursday, July 31 at 6:00 PM and closing on Sunday, August 3 late in the evening — Piazza Roma welcomed the traditional communal tables at the foot of the Viterbo fountain, with food stalls dedicated to the cavatello vitorchianese, the town's signature dish recognized as a PAT of the Lazio Region since 2017, served in the classic version with fresh tomato and wild fennel. Every evening, music and moments of social interaction enlivened the village. The 2025 edition was also marked by a special event: on Friday, August 1st, the new artistic lighting of the west cliff was inaugurated, a multi-year project co-financed by the Lazio Region with low-consumption projectors, which highlights the profile of the hanging village at night.
