Celebrating Carbognano's signature pasta with tradition, authentic flavors, and live music
In the heart of the Viterbo Tuscia region, the small town of Carbognano dedicates one of its most cherished summer festivals to gavinella, a handmade pasta that has become a symbol of the town's identity. The Carbognano Gavinella Festival brings Piazza San Filippo to life for five evenings, transforming it into a large, convivial gathering where the aroma of rich sauces and grilled food mingles with music and the chatter of locals and visitors arriving from across Lazio.
Gavinella is a simple, rustic pasta made from nothing but water and flour, following an ancient local tradition. Its history is intertwined with that of the village and its most famous figure, Giulia Farnese, known as "Giulia the Beautiful," who resided in the town's castle in the early 16th century while governing the fiefdom. It is no coincidence that the Pro Loco organizing the festival bears her name today. Every plate of gavinella tells a story of artisanal craftsmanship and community memory.
The star of the show is, naturally, the gavinella, served in four variations to suit every palate:
The menu is rounded out by Italian-style appetizers, grilled main courses with seasonal sides, and, for a sweet finish, chocolate profiteroles. Food and wine stalls offer a selection of local products, creating an experience that highlights the region's traditional peasant cuisine.
Every evening, the festival features live music, dancing, and outdoor entertainment. The square fills with families, young people, and groups of friends, creating the warm, genuine atmosphere that is the hallmark of village festivals. Free admission and the setting within the historic center make this event perfect for a summer evening dedicated to good food and conviviality.
Organized by the Pro Loco Carbognano "Giulia Farnese" with the patronage of the Municipality of Carbognano and the support of the Lazio Region, the Gavinella Festival is much more than a gastronomic event: it is a moment of collective pride that strengthens the bond between the village and its roots. For visitors, it is also the ideal opportunity to discover Carbognano, its Farnese castle, and the landscapes of the Cimini countryside, among the most authentic spots in the province of Viterbo.
The 2026 Carbognano Gavinella Festival enlivened Piazza San Filippo in Carbognano (VT) for five evenings spread over two weekends: Friday, July 3, Saturday, July 4, and Sunday, July 5, followed by Friday, July 10, and Saturday, July 11. Each evening, food stalls offered gavinella in its four variations, alongside grilled meats and desserts, while the square came alive with live music and dancing under the stars.
The festival was held over five evenings in Piazza San Filippo: Friday, July 3 (inauguration and opening of the stalls), Saturday, July 4, and Sunday, July 5, then resuming Friday, July 10, and the grand finale on Saturday, July 11. Every evening, starting at night, food stalls opened with live music.

By car: Carbognano can be reached via the Via Cassia (SS2) and the Orte-Viterbo expressway, taking the Vetralla/Ronciglione exit and following signs for Carbognano. By train: the reference station is Viterbo, connected to Rome, from where you can continue by bus or car. By plane: Rome Fiumicino and Ciampino airports are about an hour and a half away.
Free admission to the event; dishes are paid for at individual food stalls. The evenings take place at night.
