Edition 2025 — Caciocavallo Festival
In 2025, the Caciocavallo Festival once again brought the village of San Mauro Castelverde, in the province of Palermo, to life, renewing a tradition that has celebrated the dairy product symbol of the Madonie for years. The event featured the usual demonstrations of the pasta filata process and tastings of typical local products—from caciocavallo to tuma, from ricotta to quagliata—accompanied by local oil, bread, and wines.
The program intertwined flavor, culture, and entertainment, with performances by folk groups, Sicilian folk music, and moments of insight into Madonie cheesemaking art. Admission was free, faithful to the popular spirit of the festival, and the event also served as an opportunity to discover the historic center and the landscape of the Madonie Park.
