Irpinia's food communities compete over the most iconic dish of peasant cuisine
The Pork Soffritto Challenge is no ordinary food festival. It is a genuine gastronomic competition between food communities: each town in Irpinia fields its own team—home cooks, restaurateurs, butchers, farmers, and volunteer associations—to prepare its unique version of the soffritto, which is then tasted and judged by both a technical panel and the public. It is a day of local pride, but also a serious and joyful way to keep a recipe that was at risk of disappearing alive. The event is promoted by the Slow Food Irpinia Colline dell'Ufita e Taurasi APS, which oversees the organization, regulations, and selection of raw materials.
Pork soffritto is the quintessential dish of Irpinia's peasant civilization, linked to the winter tradition of slaughtering the pig, when nothing of the animal could go to waste. It is prepared with the less noble but most flavorful parts—heart, lung, liver, spleen, and trachea—cut into small pieces and slow-cooked for hours with lard, dried or pickled peppers, bay leaves, chili, and tomato paste. It is served piping hot on toasted stale bread, often accompanied by potatoes, chickpeas, raw onion, or crusco peppers. Every town, and ultimately every family, has its own variation: it is precisely this infinite range of nuances that makes a challenge possible.
The Challenge was born in 2007 in Vallesaccarda and has since moved every year to a different municipality in Irpinia, following a rule as simple as it is effective: the winning community hosts the next edition. Thus, over the years, the event has traversed much of Irpinia and Daunia, bringing the festivities to a new village each time. In 2025, the 15th edition was held in Mirabella Eclano, where the Taurasi community triumphed; consequently, the 16th edition, in 2026, was held in the Municipality of Taurasi, in the Province of Avellino, in the heart of inland Campania.
The day follows a well-established script. In the morning, the communities set up their stations in the historic center of the host town; then, the peasant breakfast, also known as «la prima mangiata» (the first feast), begins: a tour through the alleys where each team offers cured meats, cheeses, omelets, vegetables, and seasonal products. In the early afternoon, the actual Challenge begins, with the opening of the soffritto stands and the work of the juries.
Consistent with the Slow Food philosophy, the Challenge exclusively uses fully biodegradable tableware and a waste sorting protocol throughout the event area. Participating communities are encouraged to work with local raw materials and local farms, and each edition is accompanied by discussions on biodiversity, native pig breeds, and the recovery of the food traditions of the Campanian Apennines.
The Municipality of Taurasi is one of the most famous names in Italian oenology: it gives its name to Taurasi DOCG, the great red wine made from Aglianico grapes, which was the first wine in Southern Italy to obtain the Controlled and Guaranteed Designation of Origin. The village, perched on a spur between the Calore Valley and the Ufita hills, is dominated by the Marchional Castle, of Lombard origin and later remodeled by the Gesualdo Marquises, which today houses the Regional Wine Shop of Irpinia. Surrounding it are stone alleys, historic cellars, and glimpses of vineyards: a setting that, on the day of the Challenge, fills with fires, large pots, and the scent of soffritto.
For those visiting Irpinia, the Challenge is the best opportunity to understand in a few hours what this territory is really about: a humble yet powerful gastronomy, a world-class wine, and a network of towns that, instead of looking at each other with suspicion, have learned to challenge each other with a ladle.
Following the victory of the Taurasi community at the 2025 edition in Mirabella Eclano, the 16th Pork Soffritto Challenge returned to the village of Aglianico: on Sunday, March 15, 2026, from the early morning until evening, the historic center of the Municipality of Taurasi (Province of Avellino) hosted fifteen Irpinian food communities lined up with their large pots.
The day began at 8:30 AM at the Marchional Castle with registrations and the setup of the stations, and continued at 10:30 AM with the peasant breakfast — «la prima mangiata» — offered along the alleys by the participating communities. At 11:30 AM, in Piazzetta Largo Casale, the official presentation of the teams took place; from 1:30 PM, the actual Challenge began, with the opening of the soffritto stands, the work of the technical jury chaired by food and wine journalist Luciano Pignataro, and the voting by the popular jury.
Alongside the dish competition, a blind tasting of Taurasi and Campi Taurasini wines was held for the best Aglianico pairing award. The awards ceremony was held at 6:30 PM at the Marchional Castle, home of the Regional Wine Shop, and the day concluded at 8:00 PM at Largo Duomo with the traditional San Ciriaco bonfire.
The title of best soffritto 2026 went to the community of Grottaminarda, which presented itself with chef Roberto Leone from Sogno Risto-Gourmet and the Maria Ianniciello farm, awarded for a version faithful to grandmother's traditions, served with chickpeas and raw onion. Second place went to Flumeri, third to Vallesaccarda; the popular jury prize went to Ariano Irpino, while the award for the best wine pairing was assigned to the Badius Aglianico Irpinia DOCG 2021 by Antonio Molettieri. According to the event's rules, the 2027 edition will be held in Grottaminarda.

Admission to the Challenge requires a ticket: in 2026, the tasting ticket cost 20 euros in advance and 25 euros on the day of the event, including multiple tastings of the peasant breakfast and soffritto. Advance tickets are available through the organizers and participating communities.

The historic center is entirely walkable, with sloping cobblestones: comfortable shoes are recommended. In March, temperatures in Irpinia can still be chilly, especially in the evening during the bonfire: it is best to dress in layers. Soffritto is a very hearty and spicy dish: it is advisable to arrive with an appetite and pace your tastings. Do not miss a visit to the Regional Wine Shop in the Marchional Castle.
