The ancient carnival tradition of 'paniccia' in the heart of the Valsesia valley
In the municipality of Balmuccia, a small village in the Valsesia valley (Province of Vercelli, Piedmont), one of the most deeply rooted and beloved traditions of the entire valley is renewed every year during the Carnival period: the Paniccia. It is a popular festival with a strong sense of community, during which 'paniccia'โa hearty rice and vegetable soup typical of the Valsesian Carnivalโis prepared and distributed for free. In 2026, the event reached its 132nd edition, a testament to its rare and precious continuity.
Paniccia is a humble yet generous dish, whose name derives from the local dialect term 'paniscia'. It is a thick soup made with rice and seasonal vegetables, enriched with meat, cured meats, and bread. Traditional ingredients include carrots, celery, onions, cabbage, leeks, beans, bacon, minced beef, tomato, and potatoes. It requires a very long cooking time in large copper cauldrons, which is why the fires are lit in the middle of the night, well before dawn.
Paniccia is more than just a dish; it is a symbol of an ancient act of charity. According to stories passed down through generations, the soup was originally prepared in Valsesia to feed the poor and the inmates of the Varallo prisons. This charitable spirit inspired the custom, still alive in Balmuccia, of distributing the soup for free to anyone who arrives, keeping the meaning of sharing that characterizes the festival intact.
Preparation begins in the dead of night: in Balmuccia, the fires are lit around 2:30 AM. After hours of simmering, the cauldrons receive the priest's blessing, and around noon, the distribution of portions to the public begins. In 2026, well over 200 portions were served, a significant increase compared to the previous year. The festival then continues with a community lunch in the hall adjacent to the town hall, bringing together over a hundred diners, followed by a charity raffle draw.
The Paniccia of Balmuccia is part of the wider calendar of 'panicce' and 'busecche' (soups and tripe dishes) that bring the Valsesia valley to life throughout the Carnival season, from Varallo to Borgosesia, from Quarona to Boccioleto, and as far as Alagna Valsesia and many other villages. Each town guards its own recipe and customs, but all share the same spirit: large cauldrons over the fire, many volunteers at work, and long tables where the community gathers. In Balmuccia, this tradition is entirely driven by the volunteer work of the residents, the true engine of the festival.
The 132nd edition of the Paniccia of Balmuccia was held on Saturday, February 21, 2026. Preparation began in the middle of the night, with the lighting of the fires under the large cauldrons around 2:30 AM. Around noon, the cauldrons received the blessing of Father Alberto Andrini, who assisted and replaced Father Domenico Guala, and the distribution to the public began.
Well over 200 portions were distributed, a clear increase compared to the previous edition, signaling growing participation in this tradition. The festival continued with a community lunch in the hall adjacent to the town hall, which brought together over a hundred diners, followed by the raffle draw. The 133rd edition is already scheduled for Saturday, February 13, 2027.
Balmuccia is located in the Valsesia valley, along the road that climbs up the Sesia river valley towards Alagna Valsesia. By car, it can be reached via the A26 motorway (exit Romagnano Sesia-Ghemme), continuing along the SS299 state road of Valsesia. The nearest train station is in Varallo, which is connected by bus lines to the villages in the valley.
The event takes place during the Carnival period, usually in February. The 2026 edition took place on Saturday, February 21st; the 133rd edition is already scheduled for Saturday, February 13th, 2027.
The distribution of paniccia is free. For the community lunch organized in the town hall, capacity is limited: it is advisable to inquire in advance with the Municipality of Balmuccia.
Bring your own pot or container to receive your portion of paniccia, according to traditional custom. Dress warmly, given the winter season and the altitude of the valley.
